Description

Potassium citrate, also known as trithis compound, is a potassium salt of citric acid with the molecular formula K₃C₆H₅O₇. It appears as a white, hygroscopic crystalline powder that is odorless and has a saline taste. This compound is highly soluble in water and glycerin but insoluble in ethanol. This compound is commonly used as a food additive to regulate acidity and is known by the E number E332.

Application

In the food industry, it is used as a buffer, chelating agent, stabilizer, antioxidant, emulsifier, flavoring agent, etc. It can be used for milk and dairy products, jelly, jam, meat, canned hydrogel snacks, emulsification of cheese, preservation of citrus, etc. It can be used for hypokalemia and potassium deficiency and alkalization of urine in the pharmaceutical industry. It can also be made into high-efficiency compound fertilizer, and can also be used in papermaking, gold plating and other industries.
